- BBQ Chicken Bites

BBQ Chicken Bites

2 boneless chicken breasts
1 small onion chopped
2-3 garlic cloves minced
1/4 to 1/2 a cup of chicken stock, beer OR white wine for deglazing
1 cup BBQ sauce (I like Sweet Baby Ray's if I don't have my own)
1/4 cup of Flamin' Hot Sauce (less or more to taste)
Salt and pepper
2 TBS oil

Cut the chicken breasts into chunks
sprinkle with S&P
Put oil into saute pan and brown chicken on medium high heat 4-5 minutes
remove partially cooked chicken to a plate-leaving juices in pan
saute onions and garlic until soft... DONT BURN THE GARLIC!!!!
Heat on Medium high and
 Add 1/4 to 1/2 cup of liquid beer, wine, chix stock, apple juice preferably NOT water... You want flavor here!
Mix the BBQ sauce and Flamin' Hot Sauce together and add to pan. It should bubble up a bit
Put the chicken back in the pan and any juices left on the plate.
Reduce the heat to medium-low and let the flavors party in the pan stirring occasionally.
You should see the sauce thicken and start to stick to the Chicken like a thick glaze.

IT'S DONE--- Plate and serve!
If you want to be fancy chop some green onions or parsley and sprinkle on top.
If you wanted to make into a meal, make some white rice or french fries!!!


Tucker's Flamin Shrimp:

1 Bunch of Asparagus
1 lb of precooked shrimp
1/4 cup of Flamin' Hot Sauce
1 tsp dried basil
1 tsp of garlic salt
pepper to taste
8 oz of rigatoni (1/2 box)
olive oil to saute
4oz of crumbled bleu cheese or feta

While boiling rigatoni
saute asparagus chopped in pieces
along with herbs
toss in shrimp add hot sauce
drain pasta and add to pan
mix together
pour into serving dish
top with crumbled bleu cheese or feta


Flamin' Bloody Mary aka Happy Weekend!!

1 oz your favorite Vodka
3-4 oz Bloody mix---we like V8
Horseradish 1/4 tsp
pepper to taste
1/2 tsp picklechick pickle juice
1 tsp of Flamin' hot sauce
Garnish with a picklechick pickle
piece of celery and a wedge of lemon
